This beer was brewed during a recent brew-in at Acme Brewing Co., a subsidiary of Kauffman Enterprises, Inc. The day was the 20th of May, the day on which the last snowfall of the season graced our Colorado plains. As I was cleaning up the last remnants of another successful brew - this very Kolsch as a matter of fact- someone remarked "$#*% look at that!" The "that" just happened to be a cold front, which we all could see very clearly moving from the north and in our very direction. While most of us ran for our cars to roll up the windows it became quite evident that rain was not the threat. In fact it was the 50-70mph winds that were soon causing us great consternation, not to mention the blowing about of brewing equipment and half full beer glasses. Miraculously, nothing broke and the Kolsch survived, as did Bob's porter which was starting its chilling phase, which was helped no doubt, by the snow that was soon to follow. You can enjoy Colorado Calamity Kolsch at the June meeting. Or better yet, brew up a batch using the following recipe:
12-gallon all-grain recipe
90 minute boil
O.G. - 1050
IBUs - 30
Yeast - White Labs Kolsch
Mash Temp - 145-149 degrees F
Irish Moss @ 15 min from end of boil
Grain Bill:
85% Weyermann's Pilsner Malt and 15% Great Western White Wheat Malt
Hop Schedule:
2 oz. @ 60 min - Perle (Leaf, 7.8 % AA)
1oz. @ 30 min - Hersbrucker (Pellets, 4.9% AA)
Ferment at 60 degrees F for one week, then gradually lower to conditioning temperature (32-40 degrees F). Condition for 3-4 weeks if you can wait that long!
