Recipe: California Common
Fermentables
- 5.5 lbs pale + 1.5 lbs munich malt extract syrup
- OR 7.0 lbs pale malt extract syrup
- OR 6 lbs dry malt extract
- (enough malt extract to get OG 1.046-1.050)
- 1 lb crystal malt 40L
- (all-grain: try 75% 2-row, 15% munich, 10% crystal 40L)
Hops
- Northern Brewer - 1.0 oz (60 min) : 10-11 HBU to get about 42 IBU
- Northern Brewer - 0.5 oz (30 min)
- Northern Brewer - 0.5 oz (10 min)
- Northern Brewer - 0.5 oz (0 min)
Other
- Wyeast 2112 California Common
Procedure
- steep crystal malt at approximately 150F for 15 minutes, rinse,
then add extract and boil for 60 min
- top up fermenter to reach desired OG (probably 5.5G)
- ferment as cool as possible, target of 55F, but don't worry at 60-65F
- if bottling, prime with 2 cups XLDME in 1 pint water instead of the usual corn sugar
